Highlighting the delicious Pacific Northwest for out-of-state guests the evening started with local cheeses, like Mt. Townsend Seastack, paired with fresh figs, and tray-passed local Pacific oysters with a raspberry and shallot mignonette. Seated dinner featured beef tenderloin and wild Pacific salmon. Late night snacks at the end of the evening included a Beecher’s Mac & Cheese bar with toppings like bacon and fried onions. Two of the couple’s favorite cocktails were featured – a dirty martini with a blue cheese-stuffed olive and an Emerald City Manhattan.
